More Great Ramadan Recipes from the Marriott UAE Chefs

First up comes a recipe from Chef Tobias of La Ville Hotel & Suites City Walk Dubai, Autograph Collection. He has shared with us his version of Lamb Ouzzi, a great traditional, family style dish that is deeply rooted in Emirati culture. Rich in flavor, it makes a great centerpiece to any meal but it works especially well as the anchor for an Iftar during Ramadan.

What you’ll need:

The Lamb

  • 4kg – Whole baby lamb or 3kg lamb shoulder

For the Marinade

  • 2kg – Yoghurt
  • 300g – Onion, chopped
  • 50g – Garlic
  • 60g – Fresh rosemary
  • 30g – Cardamom
  • 80g – Salt
  • 30g – White pepper
  • 4g – Saffron

For Rice

  • 1kg – Basmati rice
  • 500g – Minced lamb
  • 200g – Ghee
  • 200g – Onion
  • 20g – Cardamom
  • 25g – Sweet pepper
  • 30g – Salt
  • 25g – Black pepper
  • 200g – Green peas, cooked
  • Dry fried nuts, for garnish (almonds, cashews, peanuts)
  • Chicken stock

What to do: 

  1. Mix the yoghurt, garlic, onion, rosemary, cardamom and white pepper. Season with salt and rub onto the lamb. Marinate the lamb overnight.
  2. Put the marinated lamb in a baking tray at 180C for 2 hours. Cover with foil 15 minutes before its 2nd hour to make the skin crispy.
  3. Sauté the onion with ghee for 3 mins, then add the mince and cook for 20 mins, constantly stirring to prevent the meat from clumping. When the meat is browned, add salt, sweet pepper, black pepper and cardamom.
  4. Then, add chicken stock and cook on high heat for 10 mins. Add rice, stir for 5 mins and cover. Cook, covered, on low heat for 12 mins. When the rice is cooked, mix in the green peas and some of the fried nuts.
  5. Put the rice on a large platter, place the roasted lamb on top and sprinkle with the remaining nuts.

 

For every good Iftar, there must be a balance between sweet and savory, so Chef Debrup Mitra, Executive Chef at the JW Marriott Hotel Dubai, has offered up his take on the classic Umm Ali. This dish is a guaranteed crowd pleaser for anyone with a sweet tooth and works amazingly to finish off your Iftar indulgences.

What you’ll need:

  • 250g – Puff pastry sheet
  • 500g – Milk
  • 100g – Sugar
  • 100 g – Whipped Cream
  • 10g – Coconut powder
  • 10g – Nut pistachio green
  • 5g – Raisin
  • 5g – Sliced almonds
  • 5ml – Rose water

What to do:

  1. Pre heat the oven to 180C
  2. Bake the puff pastry till golden brown and crisp.
  3. Boil the milk and sugar.
  4. Crush the baked puff pastry lightly and put into a deep baking dish. Add the coconut powder over it. Pour the hot milk on top of the puff pastry. Soak for few minutes.
  5. Add the whipped cream on it and bake at 180*C for 10 minutes, till a golden brown colour on the surface.
  6. Garnish with sliced nuts, raisins and serve hot.
